The Need for Extra Air
In theory, a fire needs exactly enough air to supply the oxygen that burns the fuel. In practice, this perfect amount is never quite enough, because fuel and air do not mix flawlessly, and some fuel would go unburned. So a fire is always given some surplus — “excess air” — to ensure every bit of fuel finds oxygen and burns completely.
Too Little: Incomplete Combustion
Starve a fire of air and combustion is incomplete: fuel is not fully burned, releasing less energy than it holds and producing carbon monoxide — a colorless, deadly gas — and soot. Insufficient air wastes fuel and creates hazards. This is the dangerous end of the balance, where the fire cannot fully consume what it is fed.

Too Much: Wasted Heat
The opposite error is over-airing. Every bit of excess air pulled through the fire must be heated and then carried out the stack, taking useful heat with it. The more surplus air, the more heat escapes uselessly up the chimney. So while some excess air is necessary, too much quietly drains efficiency, warming air that did no burning at all.
