What Makes Water "Hard"
Hard water is simply water carrying a lot of dissolved minerals, chiefly calcium and magnesium, picked up as it moves through rock and soil. These dissolved minerals are harmless to drink, but they cause the familiar nuisances of hard water: scale that builds up in kettles, water heaters, and pipes; soap that won't lather; spots on glassware. "Hardness," measured in grains per gallon, is essentially a count of how much of these mineral ions the water contains, and it is the key number the calculator uses.
The Ion-Exchange Trick
A water softener removes these hardness minerals through ion exchange. Inside the softener is a bed of tiny resin beads that carry a mild electrical attraction and are loaded with sodium ions. As hard water passes through, the resin grabs the calcium and magnesium ions, which it holds more strongly, and releases sodium ions into the water in their place. The hardness minerals are swapped out for sodium, which does not cause scale or fight soap. The water emerges soft, having traded its troublesome ions for benign ones.

Why the Salt Runs Out
The resin can only hold so many hardness ions before it is saturated, its sodium exhausted and every site occupied by calcium and magnesium. At that point it can no longer soften. This is where the salt comes in. Periodically, the softener "regenerates" by flushing the resin with a strong salt brine. The sheer concentration of sodium in the brine reverses the exchange, driving the captured hardness ions off the resin and reloading it with fresh sodium, ready to soften again. The spent brine, carrying the hardness away, goes to the drain.
Why Harder Water Eats More Salt
Now the calculator's logic makes sense. The harder the water and the more of it you use, the more hardness ions the resin captures, and the faster it saturates, meaning the more often it must regenerate, and the more salt it consumes.
