But a handful of things in a recipe stubbornly refuse to scale by simple multiplication, and doubling or halving them along with everything else is one of the most common ways a scaled recipe goes wrong. Knowing which ingredients follow the ratio and which quietly break it is what separates a scaled recipe that works from one that turns out flat, over-salted, or oddly seasoned.
Most Things Scale, a Few Don't
The scaling ratio is trustworthy for the bulk of a recipe, flour, sugar, liquids, fats, the structural ingredients that form the body of a dish. Double the servings and you genuinely need double the flour. The trouble is that a recipe also contains ingredients whose effect is not proportional to volume, and cooking behaviors that depend on the physical size of the batch rather than the quantity of food. These are the exceptions the arithmetic cannot see.

Salt and Spices Follow Perception, Not Volume
Seasoning is the classic trap. Our perception of saltiness and spice is not strictly proportional to the amount, so a recipe scaled up threefold can taste over-seasoned if the salt and potent spices are simply tripled. Experienced cooks scale seasonings conservatively, adding somewhat less than the ratio suggests and then adjusting to taste at the end. This is easy to do because salt can always be added but never removed. The safe move when scaling up is to hold back the seasoning, taste, and correct, rather than trust the multiplication.
Leavening Doesn't Scale Straight Up
Chemical leaveners, baking soda and baking powder, are another exception, especially in large scale-ups. Using the fully multiplied amount in a much bigger batch tends to over-leaven it, producing a coarse crumb or a structure that rises too fast and collapses. Bakers routinely use less leavening than linear scaling implies once a recipe is tripled or more. The gas a leavener produces interacts with the batter's structure in ways that do not simply grow with batch size, which is why this is one of the most important exceptions in baking specifically.
Time and Pan Size Are Not Ingredients
The subtlest exceptions are not ingredients at all. Cooking and baking times do not scale with the number of servings, they scale with the physical dimensions of the food and its container. A cake batter doubled and baked in the same-size pan is now twice as deep and needs longer, at a possibly lower temperature, to cook through without burning the outside. A doubled sauce in a wider pot has more surface area and evaporates differently. This is why you cannot simply multiply a recipe and keep the original time and pan, the geometry changed even though the ratio was applied correctly.
Scaling With the Exceptions in Mind

Hold back salt and strong spices and adjust at the end, reduce leavening below the ratio for large scale-ups, and re-think cooking time and pan size, which depend on the food's dimensions rather than its quantity. The multiplication gets the proportions right; handling the non-linear exceptions is what makes the scaled dish taste and bake the way the original did.
