What pH Measures
Soil pH is a measure of acidity or alkalinity on a scale where the middle is neutral, lower numbers are acidic (“sour”), and higher numbers are alkaline (“sweet”). Most garden plants prefer soil that is slightly acidic to neutral. Because the scale is logarithmic, each step represents a tenfold change in acidity — small numbers, large chemical differences.
The Nutrient Lockout
The reason pH matters so much is that it controls nutrient availability. At the wrong pH, essential nutrients that are physically present in the soil become chemically locked up, unavailable to roots — so a plant can starve amid plenty. Each nutrient has a pH range in which it dissolves and can be absorbed, and most are available together only in the mildly acidic sweet spot.

Lime and Sulfur
Gardeners adjust pH with two main amendments working by opposite chemistry. Lime raises pH, sweetening acidic soil; elemental sulfur lowers it, souring alkaline soil. The two are not interchangeable, and the amount needed depends on the soil — sandy soils shift easily, while clay resists change and needs much more, because it buffers against swings in acidity.
The Color-Changing Flower
The most charming demonstration of pH is the hydrangea, whose blooms turn blue in acidic soil and pink in alkaline soil. The plant responds to whether a particular element is available to it, which pH controls. A gardener can literally change a flower's color by adjusting the soil — a vivid, living readout of the invisible chemistry beneath.
