The Old Assumption

The index measures the effect per gram of carbohydrate, saying nothing about how much carbohydrate a realistic serving actually contains. A food can rank high on the index yet deliver little total carbohydrate in a normal portion, so its real impact is modest. Conversely, a moderate-index food eaten in a large, carb-heavy portion can hit blood sugar hard. The index describes the quality of the spike; it misses the quantity.
Load Puts It Together
Glycemic load fixes this by multiplying the index by the actual carbohydrate in a serving, giving a figure that reflects both how fast the carbs act and how many there are. This is a far more realistic guide to a food's true blood sugar impact than the index alone. It also reveals a practical lever: because load scales with portion, simply eating a smaller serving directly lowers the blood sugar impact, even without changing the food.
