When a target differs from everything around it by a single obvious feature, it pops out effortlessly, your eye finds it instantly no matter how many distractors there are. But when the target is defined by a combination of features shared with the surroundings, no single cue isolates it, so the brain must scan items one at a time, which is slow and scales with the number of items. A word search is largely a serial search: the hidden words are made of the same letters as everything else, so no letter pops out, and you must scan sequences methodically.
