The Barometer
The decisive experiment used a heavy liquid, mercury, in a sealed tube inverted in a dish. The mercury fell only until its weight balanced the atmosphere's push on the dish below, leaving an empty space, a genuine vacuum, above it. The height of the mercury column measured the atmosphere's pressure directly, and it changed with the weather and, crucially, dropped when carried up a mountain, exactly as expected if you were climbing out of the ocean of air into thinner layers above.
