Too steep a slope creates fragile short-grain at the tips of the tails that can break; too shallow and the joint approaches a straight box joint with less mechanical lock. The traditional ratios, steeper for softwoods and shallower for hardwoods, balance mechanical grip against the strength of the wood, which is why they became conventions. Varieties of the Joint

The dovetail comes in forms suited to different needs. Through dovetails show the joint on both faces, celebrated as decoration on boxes and carcasses. Half-blind dovetails hide the joint on one face, the classic choice for drawer fronts where you do not want end grain showing. Sliding dovetails run a single long tail in a matching groove, used to join shelves and partitions.
