The calorie printed on every food label is a unit of heat borrowed from physics and applied to the human body. The idea that food could be reduced to a single number of energy units was a scientific breakthrough — and it began, fittingly, with burning food inside a chamber to measure the heat it released.

A Unit of Heat

The calorie originated as a physical unit — the heat needed to warm water by a degree. Nutrition borrowed it to describe the energy stored in food, reasoning that the body, in essence, “burns” food for energy just as a furnace burns fuel. The food calorie is really a kilocalorie, a thousand of the physicist's small calories, which is why food energy figures are so large.

Atwater and the Food Calorie

In the late nineteenth century the American chemist Wilbur Atwater pioneered the measurement of food energy, burning foods in a calorimeter and studying how the human body used them. He established the familiar energy values — the approximate calories per gram of protein, fat, and carbohydrate — that still underlie nutrition labels today. He made food quantifiable.

Not All Calories Are Simple

The calorie is a real and useful measure, but the body is not a simple furnace. The calorie is a powerful approximation, not a perfect one.

Atwater's system endures because it is simple, standardized, and broadly accurate — a physicist's unit that became the common language of eating.
