Latent heat — the energy absorbed or released when water changes state — is more than a laboratory curiosity. This is the power source of thunderstorms and, on a grand scale, of hurricanes, which draw their ferocious energy from the latent heat of water evaporating off warm tropical seas. When steam touches skin and condenses, it dumps its large latent heat into the flesh on top of the burn from its temperature.
