Before compressors and refrigerants, keeping things cold meant one thing: ice, cut from frozen lakes in winter and hoarded through summer. The vast, forgotten industry of the natural ice trade cooled homes and preserved food for generations — and it is why cooling capacity is still measured in “tons” to this day.

Harvesting Winter

In cold regions, workers sawed thick slabs of ice from frozen ponds and rivers each winter, hauling them to insulated icehouses packed with sawdust. There the ice survived through the warm months, a stored harvest of cold. An entire seasonal economy grew around cutting, storing, and moving ice — a commodity that was, quite literally, frozen weather.

Frederic Tudor's Gamble

The trade was transformed by Frederic Tudor, the “Ice King,” who in the early nineteenth century bet that ice from northern lakes could be shipped to hot climates and even across oceans. Ridiculed at first, he refined insulation and storage until ice could travel thousands of miles and arrive largely intact, building a global business selling winter to the tropics.

The Icebox in the Home

Households kept an icebox — an insulated cabinet cooled by a block of ice delivered regularly by the iceman — to preserve food before electric refrigerators existed. The daily rhythm of ice delivery was part of urban life, and the melting block in the kitchen was, for decades, the only refrigeration most families knew.

Why We Still Say “Tons”

This icy heritage survives in the language of air conditioning. A “ton” of cooling is defined by the rate of heat absorption from melting one ton of ice over a day — a direct measurement inherited from the era when cooling really did come from ice. When a modern system is rated at three tons, it is quietly measured against the melting of ice, the technology mechanical refrigeration replaced.
