The Dial and the Reality Diverge
An oven's thermostat aims for the set temperature, but many home ovens run meaningfully hotter or cooler than their dial claims, sometimes by a substantial margin, and they drift further out of calibration as they age. A recipe developed at a true given temperature can underperform in an oven that actually runs cooler, cakes that do not set, roasts that take longer, or one that runs hotter, burnt edges, dry results. Ovens Cycle, They Don't Hold Steady
A conventional oven does not hold a constant temperature, it cycles. The element heats until the oven passes the set point, shuts off until the temperature drifts below it, then reheats, so the interior swings above and below the target in a saw-tooth pattern. The set number is really an average around which the true temperature oscillates. This cycling is usually fine, but it explains why delicate items can be sensitive to oven position and timing, and why preheating fully matters, opening the door mid-cycle drops the temperature and lengthens the swing.
Convection Changes the Rule
A convection oven adds a fan that circulates the hot air, and that moving air transfers heat to food far more efficiently than still air. The practical consequence is that a convection oven cooks faster and more evenly at the same set temperature, which is why the common guidance is to lower the temperature, often by around twenty-five degrees Fahrenheit, or shorten the time, when adapting a conventional recipe to convection. Ignoring this leads to over-browning. The fan also largely evens out the hot spots, one of convection's real advantages. So the same converted temperature means something different depending on whether the fan is running.
