Fahrenheit, Celsius, and the Odd One Out: Gas Mark

Fahrenheit and Celsius convert to each other with a clean linear formula. Gas Mark, the numbering system used on many UK and older gas ovens, doesn't — it's a published lookup table rather than a formula, built up in uneven steps that don't correspond to a fixed number of degrees each. Converting to or from Gas Mark means matching against that reference table, interpolating between points for values that fall in between.

The Formula

C = (F − 32) × 5/9
F = C × 9/5 + 32

All conversions route through Celsius internally: Fahrenheit and Gas Mark inputs are first converted to Celsius, then from Celsius to whichever unit is requested.

Where This Matters

  • Following UK recipes — many British and European recipes specify Gas Mark or Celsius rather than Fahrenheit.
  • Older ovens — some vintage gas ovens are dialed in Gas Mark numbers only.
  • Recipe adaptation — converting a recipe's temperature to match whatever scale your oven actually displays.
