Why sea-level recipes need adjusting above 3,000 feet
Lower atmospheric pressure at elevation causes baked goods to rise faster and moisture to evaporate more quickly - standard sea-level recipes typically need more liquid, slightly less leavening and sugar, and a lower oven temperature to bake evenly at altitude.
Worked example
For a recipe originally calling for 1 cup liquid at 350F, baked at 5,000 feet elevation:
Result: Add ~6.0 tbsp liquid, reduce oven to 325.0F, reduce sugar ~2.0%
These are general starting-point adjustments based on widely published high-altitude baking guidelines - significant recipe testing is often still needed for best results at any specific altitude and recipe, since exact behavior varies by ingredient ratios and the specific baked good.
