Why doubling a recipe isn't always simple multiplication
Unlike most ingredients, leavening agents don't scale perfectly linearly in large batches - using the fully scaled-up amount often over-leavens a much bigger batch, producing coarse texture or a collapsed structure.
Worked example
For 1 unit of leavening scaled up 4x (quadrupling the recipe):
Linear Scale = 1 x 4 = 4.0
Recommended = 3.0 (vs 4.0 if scaled linearly)
Experienced bakers commonly reduce leavening below the linear scaling amount for larger batch sizes - this becomes especially important for batches scaled 3x or more, where the reduction can meaningfully improve texture compared to naive linear scaling.
