Why "boiling" doesn't mean the same temperature everywhere

Water boils at a lower temperature as altitude increases, since atmospheric pressure drops with elevation - this is exactly why boiled foods take noticeably longer to cook at high elevation, even though the water is still visibly boiling.

Worked example

For an altitude of 5,000 feet:

Boiling Point = 212 - (5000/500) x 0.9 = 203.0 F (95.0 C)

This result matches real published high-altitude cooking references for Denver, Colorado (elevation roughly 5,280 feet) almost exactly - water there genuinely boils around 202-203F rather than the sea-level standard of 212F, which is why pasta, eggs, and vegetables all need extended cooking times at that elevation.
