Why weight beats volume for consistent brines
Measuring brine by weight percentage rather than volume gives far more consistent results, since salt volume varies significantly between salt types - table salt, kosher salt, and flaky salt all pack very differently by volume despite weighing the same amount by mass.
Worked example
For 60g of salt dissolved in 1,000g of water:
Salinity = 60 / (60 + 1000) x 100 = 5.66%
