This is exactly why acetylene, not natural gas, is the standard choice for oxy-fuel cutting and welding torches — the extra several hundred degrees makes a practical difference for cutting through metal. Adiabatic flame temperature assumes no heat loss to surroundings, so real measured flame temperatures typically run somewhat below these theoretical maximums.
