Why "net carbs" is tracked separately

Low-carb and ketogenic diet tracking often subtracts fiber and half of sugar alcohols from total carbohydrate counts, on the reasoning that fiber passes through largely undigested and many sugar alcohols are only partially absorbed by the body.

Worked example

For a food with 30g total carbs, 8g fiber, and 4g sugar alcohols:

Net Carbs = 30 - 8 - (4 / 2) = 20 g
